baked stuffed pepper

This is a quick and tasty lunch or dinner that is cleanse-friendly. 

Ingredients:

1 green pepper, cored
1 avocado
6-7 oz. ground turkey
1 tomato, diced
1/2 cup of finely diced mushrooms
1 garlic clove, chopped
Sea salt
Red pepper
Black pepper
Oregano

Instructions:

Preheat the oven to 350 (because planning ahead!) 

Sautée the garlic and ground turkey until brown. Add tomatoes and mushrooms to pan and cook for 1-2 minutes. 

Mash or purée the avocado. This will give a creamier texture to your pepper stuffing. Add avocado to pan with turkey, and mix in spices. 

Stuff this mixture into the pepper. Put the pepper in a deep dish baking pan and bake for 10-15 minutes.
