no commitment potato snacks! yayyyy


Potato chips are awesome, and they're even awesomer homemade.

This recipe can be as simple or as fancy as you want it to be.
The below recipe is for one person so add more potatoes accordingly.

Basics:
2 Potatoes
olive oil
salt

Optional:
onion
garlic
spices
anything else that your little heart desires

Cut the potatoes in thin slices (the thinner the better since they will cook faster and be crispier). Know that the crispier you want your potatoes, the smaller they will be. If your entire pan is filled with potatoes- they WILL shrink. You will have half of what you are starting with.

Tips: If you choose to add onion, add it first and cook until it becomes transparent. If you add it at the same time as the potatoes -they will get soggy. Same thing for the oil- don't add to much. You are not deep frying this meal. THIS IS A HEALTHY MEAL.

One last wisdom- while your potato snacks would be ready much faster with a lid over the pan, the steam trapped inside will make your potatoes soggy. Be patient. It takes about 15 minutes for them to be ready (if they're thinly sliced. if not- a bit longer) so while you wait go do a squat or two in your living room. I tend to impatiently poke my chips over and over again with a fork and they end up resembling a puree. Just leave them alone.

  1. Try substituting sweet potatoes to cure a sweet tooth! You can compliment the taste with spices like clove, cinnamon, and brown sugar.
