fruit cleanse butternut squash tomato soup

I made this soup for dinner during my fruit cleanse.  It was warm, delicious, and filling! This recipe makes at least 5 servings, so there is room for leftovers or you can use half the squash and coconut milk for less.

Ingredients:
1 butternut squash
2 tomatoes
1 large avocado
1 1/2 cups of coconut milk
1 lemon
sea salt
dried red pepper flakes

Cut the squash into slices and then quarter each slice.  Boil this until you can easily pierce a fork through them.  Strain the squash and puree in blender with 1 cup of coconut milk. Pour mixture back into your cooking pot. Dice one of the tomatoes and the avocado and puree in blender with 1/2 cup of coconut milk. Stir the tomato mixture into the squash.  Squeeze the lemon juice into the soup.  Dice the remaining tomato and add to soup.  Add water to thin soup out if desired.  Add salt and red pepper to taste.   Black beans could also be added for an extra protein kick!
