You know what this means... soup time!

I saw this recipe online from Donna Elick and it looked delicious. I had to make it. I did not have all the ingredients on hand though, so I had to modify it by a tiny bit. It was still really delicious and really easy to make.
- 1 Tbsp extra virgin olive oil
- 1 lb boneless skinless chicken breast
- ½ tsp ground black pepper
- ½ tsp smoked paprika
- 6 cup chicken broth
- 1 cup jasmine rice
- 2 cups of broccoli florets
- 1 cup of cauliflower florets
- 8-oz shredded cheddar cheese (or your favorite cheese)
- 2% greek yogurt
Now the good stuff:
- Before we start, add 1 cup of brown rice to a separate pot and start cooking it. It takes a bit for it to cook (as opposed to white rice which isn't as healthy), so do that first.
- Heat an 8 quart pot over medium high heat. Dice chicken into bite size pieces.
- Add olive oil and chicken to pot. Sprinkle pepper and paprika on chicken. Stir. Cook chicken until golden brown, about 5 minutes. Add chicken broth and cover. Bring to a boil.
- Add your rice (it's ok if it's not cooked all the way yet), broccoli, and cauliflower. Replace cover. Cook until rice is almost tender, about 8-10 minutes.
- Add cheese. Stir and reduce to simmer. Let soup warm while you set the table, about 5 minutes. It will smell delicious and you will want to munch on it. DON'T. Get away from the kitchen and do some squats in the living room instead.
- To make your soup creamier, add greek yogurt at the table. DON'T add it at the stove- if you overcook it it will separate and it won't be pretty.
